Very Easy, Very Fast Vegan Meals

As a long time vegan, I have heard many reasons for why the lifestyle is just too hard. I am not writing this article to convert you, to judge you, or to tell you how you should live. Although vegans have a terrible reputation for all those things, I don’t believe in trying to control people.

My purpose in sharing the following “recipes” with you is to give you some ideas for healthier meals that are fast, easy, and inexpensive to make.

Rice and Beans

Rice (make in rice cooker, make on stove or buy already prepared from take-out restaurant or supermarket food bar, or buy cooked, frozen rice in the freezer aisle)

Beans (black beans, kidney beans, etc.) Open the can.

Frozen veggies (corn, peas, etc.)

Jar of your favorite salsa.

Put small amount of oil in large frying pan over medium heat. Add prepared rice (or frozen rice). Stir around, add frozen veggies, stir some more, add jar of salsa, heat through. Serve as is, or use to fill tacos.

Bean or Lentil Salad

Can of beans (black, garbanzo, cannelini, etc) or lentils, rinsed and drained
